Mavro negroamaro is a wine produced by Vinicola Palamà starting from 100% Negroamaro grapes, grown with the sapling and espalier techniques, in the countryside of Cutrofiano with a yield of about 80 quintals per hectare. Mavro which in Greek (mavros) means black, is a wine that is produced only in the best vintages.
The grapes are harvested manually in wooden boxes in the last week of September. The vinification begins with the classic de-stemming and pressing followed by a maceration and fermentation of about 10 days at a controlled temperature. Once the malolactic fermentation has been carried out, the wine ages for 12 months in French oak barriques and finally rests for a few months in the bottle.
Mavro negroamaro has a dark, dense and impenetrable ruby color crossed by purple flashes. The nose offers aromas of undergrowth, mixed with spicy hints and floral, vegetable, empyheumatic and toasted sensations. In the mouth, the first impact of the sip on the tongue is enveloping and warm, until tempered with a harmonious freshness, smooth tannins and a soft finesse. Afterwards, a powerful and compact fruit is chewed, thanks to the excellent dosage of the wood and then savory and mineral vibrations of red earth are enhanced. The wine is well structured, balanced, vital, full-bodied, round, complex and deep. Pleasantly bitter finish as the negroamaro should.
Pairing: Seasoned cheeses and very tasty salami. First courses based on pork and wild boar and roasted red meat.
