MAVRO Primitivo IGP Salento Vinicola Palamà is a wine made exclusively from 100% primitive grapes produced with the traditional Apulian sapling training system and with a small part of the blend produced with the modern espalier system, with a total production that never goes to exceed 90 quintals per hectare.
The grapes are harvested in September, after having undergone a slight over-ripening in the vineyard, and then fermented at a controlled temperature in steel. After malolactic fermentation, the wine rests in French oak barrels for a minimum of 12 months, with woods ranging from the first to the fourth passage. The wise choice of woods enhances the balance and elegance of a pure Primitivo with a great structure, never cloying but surprisingly fresh.
Mavro Primitivo is a wine with a bright ruby red color, dense, clear, brilliant, with garnet reflections and rich in consistent and dense arches. The nose is intense, fine, full-bodied and complex, with fruity hints of dried plum and jam, spicy notes of pepper and licorice and in the mouth notes of light tobacco, leather and Mediterranean scrub can be recognized. There are also slightly iodine notes that make it a peculiar wine. dry wine, of good freshness, soft, quite tannic with dense and sweet tannins, of good persistence and complexity, good amplitude and flavor. On the whole, the wine is balanced and presents retrogustative sensations of cherry under alcohol and licorice.
It goes well with fresh cheeses made from raw cow’s milk such as seasoned caciocavallo or taleggio or red meat with immediate cooking such as pan-fried filet with cannellini beans.
