Metiusco, from greek language I get drunk, was the first bottle created by the company, the first vintage dates back to 1996. Metiusco Aleatico is produced with grapes from vines grown with the 120-year-old Apulian sapling technique in the Chiesanuova area ( Sannicola) just 3 km from the sea with a final yield of 20 quintals per hectare. It goes without saying that the quality of the grapes is simply incredible.

The harvest is done manually through the use of wooden boxes in the first week of September after a slight withering of the grapes on the plant. The grapes are then de-stemmed and pressed to begin a pre-fermentation maceration with the concomitant fermentation at a controlled temperature. Subsequently, the drawing off takes place and the must continues fermentation until it reaches 15% vol of alcohol. After fermentation, the wine rests in steel for a month and then begins a long refinement in the bottle.

Palamà’s Metiusco Aleatico is a wine with a very deep ruby ​​red color. The nose is intense, aromatic, with a prevalence of fruity scents such as blackberries, black cherries and figs and then continues with aromas of cherry jam. Sensual, persuasive and perfectly balanced palate between the sweetness of the residual sugar and excellent acidity.

Pairings: Perfect to combine with traditional Salento desserts, but also with a good homemade panettone or high quality dark chocolate.
