Metiusco is the symbolic wine of the Vinicola Palamà Winery. The Red, White and Rosé wines, have more than any other wine, have characterized the history of the company for 25 years to date, winning prizes and awards all over the world. Precisely to celebrate the 25th anniversary of the release of the Metiusco line, this special Metiusco Anniversario label was born, produced from only Negroamaro grapes, the symbol of the viticulture of Salento, and the vine of choice of the winery in which both red and rosé it is expressed at the highest possible levels.
Metiusco Anniversario is produced using blends of Apulian sapling plants of about 50/70 years harvested in the third decade of September when the polyphenolic ripening of the grapes is complete. The vinification is carried out after destemming through a long maceration of about 20/25 days at a controlled temperature of about 18/20 ° C. Finally, the wine ends its maturation with a 50% which ages for 9 months in second and third passage barriques and the rest that ages in steel. After the assembly, the wine is bottled and left to rest in the bottle for another 3/4 months.
This new Metiusco is presented in the glass with an intense and brilliant garnet red color. On the nose ample hints of ripe cherry, Mediterranean herbs and spices. In the mouth it is warm, intense, juicy. Red and black fruit, lots of acidity and an incredibly persistent and slightly bitter finish that invites you to drink.
Pairings: to be combined with appetizers based on cured meats and aged cheeses, but also with important first courses such as ravioli stuffed with meat with butter and sage, and second courses based on roasted and braised meats
