MONTEPETROSO, Primitivo di Manduria DOP red wine produced by the Mocavero winery in the Arnesano area (Lecce).
This manduria primitive is made from grapes grown in the Manduria area in northern Salento. The harvest is carried out in the second decade of September with manual harvesting in wooden boxes, the bunches are selected and then proceeded with the destemming and following the maceration of the skins and the must for about 8/10 days. The fermentation is carried out at a controlled temperature and finally the wine is aged in new barriques and tonnòs for 18 months, periodically performing the batonagge.
Montepetroso has an intense red color with violet reflections, the nose is sumptuous and powerful with a classic red fruit, spice, strawberry and cherry jam and ripe fruit. In the mouth it is warm, harmonious, with a balanced tannins and a soft and pleasantly velvety finish.
This Primitivo di Manduria accompanies roasts of meat, game, mature cheeses and spicy dishes very well.
