NEGROAMARO ROSATO from the agricultural Santi Dimitri winery is produced using grapes from the land between the agro di Cutrofiano and that of Galatina.
These are soils with a clay-sandy structure and the vine is cultivated with the spurred cordon technique. The density of the plants is around 4000 / ha and the yield is around 8000 kg/ha. The harvest takes place in the first hours of dawn in the second week of September, slightly ahead of the natural ripening of Negroamaro. This practice allows for increasing the acidity and freshness in the grapes. The vinification takes place with the characteristic Salentina Lacrima technique, with a short cold maceration on the skins followed by soft vacuum pressing. Subsequently, the fermentation carried out at 15 ° C and at the end of the process, there is a cold static clarification. The wine ages for a few months in steel and bottle before being placed on the market.
Due to its typical characteristics of the Rosato del Salento, this wine lends itself to ageing for several years with a capacity for evolution that reaches even 6/7 years.
The NEGROAMARO ROSATO of the Santi Dimitri Agricultural Company presents all the characteristics of the typical Salento rosé with a pink colour that tends to orange, a freshness an acidity and an incredible body. Fragrances never intrusive and elegant of ripe fruit. In the mouth an explosion of freshness and flavour with a slightly bitter finish that immediately makes you want another sip.
