History and Production
The Negroamaro Rosato Vecchia Torre comes from vineyards located around Leverano, cultivated using the Apulian bush vine (*alberello*) and spurred cordon systems with a high planting density. Harvesting begins in the third week of September. The key process is the short maceration of the must with the skins (8-10 hours), followed by the extraction of the free-run juice and a long, low-temperature fermentation which preserves its aromatic intensity.
