NEGROAMARO Rosato Salento is produced with Negroamaro grapes from vineyards located around Leverano on alluvial, deep, medium-textured soils with limestone areas. The yield per hectare is 90-100 quintals of grapes and the vineyards are cultivated with the Apulian sapling and spurred cordon training system with a plant density of 4500-5000 plants per hectare. The harvest starts in the third week of September and after the destemming-crushing, the must remains in contact with the skins for about 8-10 hours. Follows the extraction of the must and the subsequent alcoholic fermentation at a controlled temperature of 16-18 ° C for a period of 12-15 days.
