Ninì Bianco Salento IGP Vinicola Palamà is the first wine, wanted and made by Michele Palamà, son of the master Ninì Palamà to whom this wine is dedicated and inspired. “In the name of the one who is the heart of Vinicola Palamà, I wanted to enclose all the passion of a dream that smacks of family and tradition, but look ahead”. Ninì is therefore a beautiful novelty, but with a soul that does not betray its past.

Ninì bianco is a wine obtained from pure Verdeca grapes produced with the espalier system and with an average production of around 110 quintals per hectare. 30% of this wine terminates alcoholic fermentation in barriques and also carries out malolactic fermentation. It is immediately blended and bottled. This wine presents itself to fans as a new way, a new taste and a new way of interpreting the classic Verdeca white grape variety of Salento.

For a first visual examination, the wine has a light green, clear, transparent, medium load and quite consistent. On the nose the wine is fine and intense with hints of white orange flowers, fresh mint, lemon zest, calicantus flower and gardenia. Finally in the mouth white Ninì is dry, fresh, iodated, of good persistence, medium alcoholic and balanced on the whole. It goes well with fish dishes and white meat with simple cooking, in the oven or in a pan: a sea bass with salt, a baked sea bream or a jacket omelette with a drizzle of raw oil on top, a raw of prawns in tartare.
