Ninì Rosso Salento IGP form Vinicola Palamà is the first wine, desired and created by Michele Palamà, son of the master Ninì Palamà to whom this wine is dedicated and inspired. “In the name of the one who is the heart of Vinicola Palamà, I wanted to enclose all the passion of a dream that smacks of family and tradition, but looks far ahead”. Ninì is therefore a beautiful novelty, but with a soul that does not betray its past. Ninì rosé is a wine produced from Susumaniello grapes with a yield of approximately 100 quintals per hectare. It is a wine which, like its two white and rosé brothers, is fermented in wood, giving this wine a note of originality in the panorama of reds made in Salento. The choice to work with an alcoholic and malolactic fermentation in barrique, combined with the careful choice of the harvest time, creates a perfect balance between acidity and softness, which makes this red extremely versatile and enjoyable.

This red wine produced from Susumaniello grapes harvested in mid-September has a fairly deep purple red color with purple reflections, clear and with a nice consistency. Arches with thick, fat and numerous tears. The nose is vertical, intense, rich in small ripe red fruits and floral scents. Good complexity, persistent, with an interesting note of Mediterranean scrub such as myrtle and floral violet. Ninì rosso is soft and enveloping in the mouth, balanced and fresh.

Pairing: It goes well with pan-fried red mullet fillets and fresh, crushed and seared cherry tomatoes or with a nice fried fish.
