Ninì Rosso Salento PGI Vinicola Palamà is the first wine, wanted and made by Michele Palamà, son of the master Ninì Palamà to whom this wine is dedicated and inspired. “In the name of the one who is the heart of Vinicola Palamà, I wanted to enclose all the passion of a dream that smacks of family and tradition, but look ahead”. Ninì is therefore a beautiful novelty, but with a soul that does not betray its past. Ninì rosato is a wine produced from negroamaro and primitivo grapes with a yield of about 100 quintals per hectare. It is a wine that, like its brothers in white and rosé, is fermented in wood, giving this wine a touch of originality in the panorama of red wines made in Salento. The choice of alcoholic and malolactic fermentation in barriques On red, this work, combined with the careful selection of the vintage period, creates a perfect balance between acidity and softness, which makes this red extremely versatile and enjoyable.
This red wine produced from a bland of Negroamaro and primitive grapes harvested between mid-September and the first days of October shows a fairly deep purple-red color with violet reflections, clear and of good consistency. Bows with thick, fat and numerous tears. The nose is vertical, intense, rich in small red ripe fruits, cherry, plum. Balsamic notes of licorice and eucalyptus, ethereal, good complexity and persistent note, always important, of Mediterranean scrub like myrtle and floral of violet. Ninì rosso is a dry and fresh acidity wine, its 14th on the palate are not felt at all. Very balanced. Good persistence and long aftertaste of red fruit and aromatic herbs. Great harmony.
It goes well with fillets of red mullet in a pan and fresh tomatoes, crushed and blanched or with a nice fried paranza.
