From the now very famous Oltremé Rosso, which is the wine of Luigi’s heart, a romantic dedication of love to his wife Romina, this new pink version is born, which like the red version is the result of passion and knowledge of the territory of Ruby family.
The grapes used for the production of this rosé wine come from the vineyards owned by the company located in JAddico, in the countryside of Brindisi, a stone’s throw from the Adriatic sea, with a medium-textured soil, based on clays, but with a good presence of sand. The planting year is 2004, the training system used is the spurred cordon with a planting density of about 6000 plants per hectare and a final yield of 80 quintals per hectare.
The grapes used to produce Oltremè Rosato are harvested manually in the first ten days of September. After pressing and destemming, and a contact with the skins for about 6 hours, the must is drawn off and fermented at a controlled temperature of 16-18 ° C in steel tanks. Once the alcoholic fermentation is complete, the wine rests for 4 months in steel vats and then continues the maturation for 1 or 2 months in the bottle.
A wine that in the glass shows a deep and bright salmon pink color, to the nose it expresses aromas of fresh summer fruit, and in the mouth it has an excellent acidity and freshness combined with a good length.
PAIRINGS: Oltremé rosato is a wine with great versatility in food pairings. It expresses itself with character, combined with beef and tuna tartare, and finds great synergy with mullet baked in foil and with vegetable tempura but also with a salmon and lime risotto or with a marinated octopus.
