PASSATURO is a red wine produced by the Vetrère farm starting from 100% black malvasia grapes, an ancient Salento vine, which has always been used for the blending of negroamaro in the production of the famous Salice Salentino DOC especially in the central part of Salento and grown in a spalier in the territory of Montemesola in the land owned by the company at an altitude of 20 meters above sea level
The harvest begins in the third week of September with a mechanical harvest, which is followed by a manual selection of the grapes and then pressing, destemming, static clarification, and finally fermentation in steel vats at a controlled temperature. The wine then rests for 4 months in steel and for another 2 months in the bottle.
This particular wine is presented in the glass with a dark ruby red color, with beautiful purple reflections. The nose expresses all its power with strawberry and cherry but also a hint of cinnamon. On the palate it approaches with great warmth and softness, the acidity barely detectable, while the complexity is remarkable and the length in the mouth is not excessive. Not too persistent finish with a light sweet note completely free of tannin. Very exclusive and particular wine to try and try again.
Pairing: Not easy pairing even if it goes very well with all very spicy dishes and goes very well with sweet and sour and with all cuts of roast pork.
