Passo Lungo Primitivo rosato IGP Puglia is a red wine produced by Cantina San Donaci starting from Primitivo grapes grown in the Puglia region on clayey soils of medium texture. The 20-30 year old plants are cultivated with the spurred cordon training system with plants of 4500 plants per hectare and with a final yield of 100 quintals per hectare.

Passo Lungo Primitivo rosato is vinified in red starting from the grape harvest that takes place in the first ten days of September. The vinification takes place in the traditional way, by skin contact (raising of the cap) the must rests on the marc for 10-12 hours, then it is separated from the marc by gravity thus obtaining only the drawing off of 40% of the product.

This primitivo is salmon pink in color with coppery reflections. The nose aromas recall fruity hints of cherry, strawberry and pomegranate and typical Mediterranean notes of the area. The structure is decidedly fresh, savory, fragrant and clean. The taste is balanced with an elegant persistence

Pairings: Ideal for aperitifs, appetizers, soft cheeses, fish and shellfish, white meats, risottos.
