Perfugio is a wine produced by Tenute Invidia obtained from negroamaro grapes grown with the espalier and Apulian sapling technique in the family lands in the countryside of San Pietro Vernotico. Perfugio is the Latin word for refuge, and takes its name from an ancient defensive structure typical of the Salento coast and present in one of the properties of the family estate.

The harvest is done manually in the second week of September. Once the destemming has been carried out, there is a maceration at controlled temperature of about 10 days in which the fermentation phase is simultaneously carried out. Once the alcoholic fermentation is completed, the spontaneous malolactic fermentation is also carried out and then the wine rests in steel and for a few months in oak barriques.

Perfugio Rosato is presented in the glass with a pale pink color with aromas of fresh and exotic fruit, and in the mouth it is soft and pleasantly fresh, with a fruity and persistent aftertaste.

Pairing: Perfect as an aperitif, it goes well with appetizers, delicate first courses, seafood, fish soups and white meats.
