PIETRA CAYA Malvasia Nera IGP Salento is a wine produced by Cantina San Donaci starting from pure black Malvasia grapes grown in the province of Lecce and Brindisi on classic red earth soils with Calcareous Clayey composition. The 30-40-year-old plants are cultivated with the Apulian spurred cordon sapling training system with plants of 4500 plants per hectare and with a final yield of 100 quintals per hectare.

Pietra Caya is vinified in red starting from the grape harvest that takes place in the second decade of September. Maceration and fermentation take place in thermo-conditioned steel silos. Once the vinification process is complete, the wine rests for 6 months in steel and then a few months in the bottle.

Ruby red wine tending to cardinal. Wide, complex nose of flowers of the Mediterranean scrub and spices. In the mouth it is pleasant, with a slightly robust and pungent entrance but which opens on the back palate more delicately. Long persistence at the right point. Wine that comes out of the box.

Pairings: Perfect with roasts, braised meats, game and cheeses.
