Pietra Caya is the new red wine of Cantina San Donaci produced from susumaniello grapes grown in the countryside of San Donaci in the province of Brindisi. A wine that will amaze you for its intense floral and fruity aromas, and for its incredible drinkability. Pietra Caya susumaniello is a perfect red wine for the summer because it is possible to taste it fresh, even at a temperature around 14 ° C.
The wine is produced using grapes that come from plants of about 40 years, with a yield of around 80 quintals per hectare. The harvest is carried out in the last week of September giving a perfect and complete ripening. Once harvested, the grapes are de-stemmed and crushed, and then continue with a maceration at a controlled temperature. At the end of the fermentation phase, the racking takes place and the wine, after filtration, rests for 3 months in steel and for 1 table in the bottle.
Pietra Caya susumaniello is presented in the glass with a purple color, with bright reflections. On the nose it releases essences of black berry fruit, but also intense and persistent floral aromas. In the mouth it is rich, enveloping, but not excessive and there is a pronounced acidity that gives it an excellent lightness in the finish.
Pairing: Perfect to combine with classic summer barbeques, but also with spicy dishes and sweet and sour preparations.
