Pietrabianca is a white wine produced by Tormaresca with Chardonnay and Fiano grapes from organic farming of the Bocca di Lupo estate in Minervino Murge (BT). The grapes are softly pressed and the must obtained is placed in stainless steel tanks at a temperature of 10 ° C, so as to obtain a natural decantation. Then the chardonnay is decanted in new French and Hungarian oak barrels, where it carries out alcoholic fermentation at a controlled temperature. The wine is then aged in barriques on the fine lees, during which malolactic fermentation takes place. Fiano, on the other hand, is fermented in steel, at a temperature of 16 ° C, in order to enhance the notes of freshness and acidity. In January the Chardonnay is decanted in steel and assembled with Fiano. Bottling takes place in March. A further refinement of 6 months in bottle follows before being placed on the market.
Pietrabianca is characterized by a bright yellow color with greenish hues. It presents numerous odorous nuances ranging from citrus to exotic fruits, to light floral sensations (magnolia) and vanilla. On the palate it releases a sapid, fresh and mineral taste with very slight wood notes. To be served at a temperature of 12 ° C.
