PIETRABIANCA Castel del Monte DOP – Tormaresca: Pietrabianca is a structured and complex white wine produced by Tormaresca (Antinori Group) with grapes from organic farming on the Bocca di Lupo Estate (Minervino Murge). The blend combines the richness and softness of **Chardonnay (90%)**, aged in barrique, with the lively freshness of **Fiano (10%)**, fermented in steel. The result is a wine with a **bright yellow color** and greenish hues. The nose offers nuances of **citrus, exotic fruits, magnolia, and vanilla**. Winemaking and Aging: Soft pressing and natural decantation. **Chardonnay** ferments in **new barriques** (French and Hungarian oak), where it also undergoes malolactic fermentation and ages on fine lees. **Fiano** ferments in **steel** at 16°C. The blend is assembled in steel in January, followed by **6 months of aging in the bottle**.

General Description and Longevity

Pietrabianca is the result of a skillful mix of international techniques (use of barrique for Chardonnay) and the enhancement of a native Apulian grape (Fiano in steel). The barrique aging gives structure, complexity, and vanilla notes, while the Fiano provides acidity and freshness, creating a harmonious and persistent wine. Thanks to its structure, Pietrabianca has good aging potential and can be cellared for **3-5 years**, developing tertiary notes of hydrocarbon and honey typical of aged Chardonnay over time.
