Primitivo di Manduria DOP is a wine produced by Masseria Jorche starting from one of the most important indigenous grape varieties of Puglia, the primitivo. The grapes used to produce this wine come from vines that grow in exceptional soils based on red earth rich in iron oxides on layers of sandstone located in the Torricella area in the middle of Manduria.

The age of the plants is 40 years and they are grown with a spurred cordon training system. The final production per hectare is equivalent to about 80 ql. The harvest is carried out in mid-September with a manual harvest of the grapes in a wooden box, followed by soft pressing, and then a fermentation at a controlled temperature with maceration on the skins. The final wine yield is about 65%. When fermentation is complete, the wine rests and ages for 9 months in barrique and finally for several years in the bottle.

This special red wine is presented in the glass with an intense dark ruby ​​red color, impenetrable, brilliant, lively. The nose is impetuous but gracefully. Cherry in spirit, clear and undisputed. And then balsamic notes, oregano, cocoa. In the mouth it is rich, warm, harmonious and enormously enveloping. Alcohol that strongly pushes a fruit that is still alive and pulpy. The finish lightly caresses the palate with a tannin that still feels quite and with a hint of black spices. However, wine that can be drunk with pleasure and not tired.

Pairing: Perfect with pappardelle with lamb ragout, with grilled red meats, with a Florentine steak or with a fillet with green pepper.
