Primitivo di Manduria Riserva DOP is a wine produced by Masseria Jorche starting from one of the most important indigenous grape varieties of Puglia, the primitivo vines. The grapes used to produce this wine come from vines that grow in exceptional soils based on red earth rich in iron oxides on layers of sandstone located in the Torricella area in the middle of Manduria.
The age of the plants is 50 years and they are grown with a spurred cordon and Apulian sapling training system. The final production per hectare is equivalent to about 60 quintals. The harvest is carried out in mid-September with a manual harvest of the grapes in a wooden box, followed by soft pressing, and then a fermentation at a controlled temperature with maceration on the skins. The final wine yield is about 65%. At the end of the fermentation the wine rests and ages for 12 months in barrique, for 12 months in the traditional capasuni and finally in the bottle for the rest of the time before being put on the market.
This wonderful red wine is presented in the glass with an intense ruby red color with violet reflections that lead to garnet red. The nose is impetuous but balanced. Ripe fruit, especially blackberry, cherry, currant. In the mouth it is rich, warm, enveloping, rightly tannic with ripe fruits, cherry and then a lot of spiciness ranging from black pepper, cloves, cocoa to vanilla. Well-dosed alcohol that strongly pushes a fruit that is still alive and pulpy. The finish is harmonious and rightly long, soft and caressing. An exceptional wine that warms the heart.
Pairing: Perfect with many preparations with long cooking of meats such as roasts and braised meats, but also excellent if you want to share a moment of pleasure in front of the fireplace with good dark chocolate and an excellent cigar.
