PRIMITIVO TERRIBILE Salento IGP is an absolutely particular and sought after red wine, a great Primitivo di Manduria. Produced from grapes harvested in the countryside of Uggiano Montefusco in the DOC Manduria area from plants bred with the typical and traditional Salentino alberello system. The type of soil on which these vines grow is clayey with a high concentration of iron-based minerals (red earth) and with a subsoil of carparo and marl which favours perfect drainage. The planting year is 1999. The yield per hectare is about 50 quintals with a very low yield of around 1 kg of grapes per plant. Finally, the type of climate in this area that is only 6/7 km from the sea is typically the Mediterranean, with ample insolation and good summer ventilation and with mild winters that are never too humid.
The harvest takes place manually, with the harvest in boxes, in the first ten days of September. The grapes are brought to the cellar in Copertino with special devices such as cooling. In the cellar takes place the destemming and the plating followed by a controlled temperature maceration. Then, when the established organoleptic chemical parameters are reached, the skins are removed or the skins are separated from the wine. Then the final product is ready for the right rest with the aging of 9 months in new American oak barrels, followed by further refinement in bottle for 1 year.
Certainly, the PRIMITIVO TERRIBILE is a majestic wine like only a Primitivo di Manduria can be. An impenetrable ruby red colour with beautiful violet reflections on the glass. A taste-olfactory power and royalty without comparison. The nose is impressive with fruity notes due to ripe fruit, red berries and elegant spicy notes such as vanilla and cloves. A final balsamic note where the scent of Mediterranean scrub is perceived. In the mouth, it is impetuous, full-bodied. Even with its 15/16 degrees of alcohol, it gives a good balance in which the elegance of tannins is well supported by a right acid note. Above all this last one, together with the high alcohol concentration, gives the wine persistence and aptitude to ageing.
