ROSA MORA is the new rosé wine born in the Paolo Leo house using Malvasia Nera-based grapes, harvested in old vineyards of the property cultivated with the spurred cordon technique in clayey soils in the San Donaci countryside and with a yield of 4500 plants per hectare and 2 kg of grapes per plant.

Malvasia Nera is considered one of the great and oldest native Salento vines, which especially in the past, shared the vineyard with the better known red grape variety Negroamaro. In recent times there has been a revaluation, with the bet of making it into wine, no longer with the aim of obtaining the well-known and traditional bland Salice Salentino DOP, but vinifying it in purity, to obtain red and now also rosé wines with an aromatic and an unrivaled character.

The grapes are harvested early in the morning in the first and second week of September and then taken to the winery for vinification. After harvesting, the grapes are cooled to 0°C and left to rest inside the soft press for about 4 hours in contact with the skins from which the characteristic “cherry pink” color is extracted. The pressed, inside a stainless steel tank, ferments at low temperature for about 10 days. Once the fermentation process is complete, the wine rests for 3 months in stainless steel vats and finally finishes its journey in the bottle for a further month.

Rosa Mora shows a bright pink color in the glass. Pleasantly fruity bouquet, with a large, inviting and elegant bouquet. Peach blossom, blackberry, strawberry, citrus and a note of green apple. In the mouth it has a decisive, crunchy, acidic entry. On the palate it is sapid, clean and fresh. Very long finish that recalls bitter almonds.

PAIRINGS: The liveliness and elegance of black Malvasia in rosé allows very curious combinations in gourmet aperitifs. The fresh sip is given to appetizing fried fish with particular reference to prawns and fried fish. The exotic aroma of the wine guarantees a fascinating oriental combination in sushi rolls, mixed sashimi and fresh fruit.
