The harvest of the grapes is carried out in the first hours of the dawn of the second decade of August the grapes, still not completely ripe, arrive in the cellar and are destemmed; Afterwards the crushed wine cools to 12-14 ° and is sent to a pneumatic press where it remains for 4-6 hours. In this period a part of color passes from the skins to the juice to give then the typical pink color. Then the must is crushed and cleaned with a static decantation that lasts 18-24 hours.
