The Salice Salentino DOP by Tenute Eméra is produced from 100% Negroamaro grapes obtained from vineyards: spurred cordon cultivation in the area of ​​Guagnano (near to Salice Salentino DOP territory ). The vines are grown on medium-textured soil, with the presence of silica, clay and sand and abundant skeleton (stones, pebbles and gravel). The yield per hectare is 120 q.

The harvest starts in the first decade of September with mechanically harvested grapes, followed by vinification with grapes that are macerated and fermented in cement tanks for about 15 days. The extraction of the color and the polyphenolic and aromatic components is favored by daily replacements of the liquid fraction on the marc. At the end of the vinification process a 12-month refinement period follows, with a slight passage in second / third generation barriques.

Salice Salentino DOP by Tenute Emèra is a wine with an intense ruby ​​red color. On the nose, elegant notes of blackberries and hints of spice. Enveloping taste, soft and persistent.
