The Salice Salentino DOP of Cantina Vecchia Torre is produced starting from negroamaro and black mallow grapes produced in the countryside of Salice Salentino. The soils on which the vineyards are cultivated are of alluvial origin, deep, of medium texture with areas tending to limestone. The yield per hectare is about 100 quintals of grapes and the training system used is the classic sapling and partially spurred cordon system with a planting density of about 4500-5000 plants per hectare.

The red vinification is carried out after the harvest which generally takes place in the last week of September and after the destemming of the grapes, the must remains in maceration with the skins for 6-7 days at a temperature of 24-26 ° C. Alcoholic fermentation and malolactic takes place in steel, aging in large oak barrels and finally the wine rests for a few months in the bottle.

This Salice Salentino DOP has a deep ruby ​​red color, with slight garnet nuances, has a vinous aroma, with hints of small red fruits and in the mouth it is full, warm, velvety with a pleasant bitter aftertaste.

Pairings: suitable to accompany dry pasta, roast meats, lamb and kid in the oven, spicy medium-aged cheeses.
