The vineyard from which this Salice Salentino Riserva by Paolo Leo is made, extends over 4 hectares of vineyards of Negroamaro and Malvasia Nera di Lecce, all bred according to the traditional method of the Apulian sapling. An important wine, a reserve that enriches the wine offer of the renowned wineries located in San Donaci.
It is made from grapes grown in Alberello Pugliese in the area around the town of Salice Salentino. The harvest takes place in the first hours of dawn in the last week of August. Then followed by a destemming and soft pressing of the berries. Fermentation is carried out at a controlled temperature of 25 ° C.
The wine completes its maturation with an aging of 12 months in French oak barrels, 6 months in large oak barrels, 4 months in steel and 4 months in bottle.
The wine shows a ruby red color with garnet reflections; elegant, intense scent of jam, spicy and pleasant, well-integrated wood scent; full, harmonious taste with delicate tannic base.
