Sant’Anastasia Riserva

Primitivo di Manduria DOP

Sant’Anastasia Riserva is a red wine produced by Beato Vini in Sava in Manduria (Puglia_Italy), in the north-western part of Salento from 100% primitivo grapes. The grapes are produced starting from plants grown with the classic Alberello Pugliese training system. The age of the plants is between 25 and 40 years. The vineyards are cultivated in organic terms with about 4000 plants for hectare and with a yield of about 30 quintals for hectare.

The harvest is carried out with a manual harvest in 20 kg wooden boxes starting from the first week of September. The grapes are de-stemmed and fermented in stainless steel silos at a controlled temperature of 27-28 °. The skins remain in contact with the must for 12 days. Malolactic fermentation takes place in silos. When fermentation is complete, the wine is aged for 24 months in French oak barrels of which 1⁄2 new and 1⁄2 of seasoned oak of second and third passage. The wine is further refined in the bottle for 12 months before being placed on the market. Number of bottles produced 2124.

Sant’Anastasia Riserva presents itself in the glass with a beautiful impenetrable garnet red color with slightly purple reflections. This reserve is undoubtedly a rich and opulent wine, with an extraordinary structure and body. The nose is characterized by a captivating and aromatic note of medicinal herbs, dried figs, Mediterranean spices. In the mouth, it is warm, seductive, enveloping. Rich and structured but nevertheless with a notable ancestry the drink reveals notes of chocolate, brown sugar, and dried cherries. It denotes remarkable persistence, complexity, and structure. This Primitivo wine is a wine suitable for ageing for at least 10/12 years.

Sant’Anastasia Riserva is a wine to be paired with full-bodied first courses and second courses based on braised, boiled, and roasted meats. Ideal with traditional dishes from southern Italy or as an accompaniment to aged cheeses. On a cold winter, evening discovers the combination with a good Swiss dark chocolate.
