Sassi del Salento is the only wine produced with primitive grapes in Salento that can boast thanks to the Rottenberg certification of theיינות כשרים Kosher for Passover title.

Kosher wine must respect the dietary rules established by the Torah, interpreted by exegesis in the Talmud and codified in the Shulkan Aruk. The reason is certainly due to the obligation to use only certified raw materials suitable for the production of kosher wine and great attention to hygiene and external contamination that the constant controls at every stage of the production process guarantee with the final release of the stringent Kosher certification.

Sassi del Salento is a wine produced from primitive grapes normally harvested in the first days of September with manual grape picking, cultivated with the spurred cordon system in the countryside of Guagnano. De-stemming, fermentation maceration in contact with the skins for 8-10 days, draining in a soft press and control of the must temperature at 25 ° C. The wine then follows the malolactic fermentation followed by bottling.

This primitive wine is a wine with an intense ruby ​​red color with a strong note of red fruit on the nose and a characteristic body and structure typical of the vine. A remarkably balanced and pleasant to drink wine, suitable to accompany grilled red and white meats, important first courses and hard and semi-hard cheeses. It is advisable to taste it at a serving temperature of 18 ° C, taking care to uncork it at least 30 minutes before serving.
