Sinergico is a wine produced by Cantina Supersanum starting from grapes grown in some old small vineyards, and from those coming from the “Don Mosè” vineyard. The small vineyards are located in different areas of the countryside of Supersano, in the province of Lecce, at the foot of a plateau locally called “Madonna di Coelimanna”. The vineyards recovered from abandonment and restored to microbiological well-being, respecting the principles of organic agriculture, have a traditional form of growing with sapling and supported sapling, their average production varies from 20 to 30q/ha. The blend used is bland of Primitivo, Negroamaro, black Malvasia di Lecce, Sangiovese, Montepulciano and Ciliegiolo grapes present in patches in the various vineyards.

During the harvest, which is generally carried out in mid-September, the grapes are harvested by hand in the early morning and then placed in 20 kg perforated crates and taken to the cellar where the crushing and destemming is carried out, which is followed by maceration on the skins for 2 days and soft pressing at a controlled temperature, then fermentation takes place for 20 days at a temperature between 20 and 25°C. After racking, the wine concludes its production phase by refining in a stainless steel silo for a period of 6 months and in the bottle for another 3 months.

Sinergico is a particular wine, obtained from indigenous grapes of the lower Salento, which thanks to its blend can be as complex as few. A range of aromas ranging from flowers of the Mediterranean scrub to ripe fruit and red and exotic berry fruit. In the mouth it is warm with its high alcohol content, which however acts as an altar to an enveloping distribution of very strong and particular sensations. A wine that is certainly authentic, complicated, all to be discovered annanta after vintage.

Pairing: To be paired with grilled meat, horse meatballs with sauce and roast beef.
