Sonetto is an extraordinary wine produced by the Produttori di Manduria winery. To produce this great classic of Salento enology, only the highest quality grapes are used from 90-year-old vineyards cultivated with the ancient and traditional Apulian sapling training system with a final yield of 45 quintals per hectare. The soils are located at 10 s.m.l in the countryside of Manduria and consist of a clayey soil with the typical red color found in this part of Puglia.

The harvest is carried out starting from the second week of September, manually in wooden crates, and then the vinification proceeds with the classic destemming and then with a maceration and fermentation of about 6/7 days at a controlled temperature. It is then drawn off and aged for about 24 months in French oak barriques followed by a period of rest in the bottle.

Sonetto is a wine with a deep ruby ​​red color, with a mature and intense aroma with evident aromas of ripe blackberries and plums, a hint of smoked combined with spicy notes of tobacco and leather. In the mouth it is clean and elastic with a taste rich in dark and ripe fruits and enveloping tannins. Well balanced, clean on the palate and of good length.

Pairings: perfect with game, roasted and grilled meats, casseroles and well-aged cheeses.

Sonetto is an unfiltered wine, the possible presence of sediments is to be considered natural, decanting is recommended before tasting.
