Sud del Sud Salento Rosso IGP by Claudio Quarta Vignaiolo is a red wine produced from a bland of Negroamaro, Primitivo, Merlot, Shiraz and Cabernet Sauvignon grapes produced from plants grown with the sapling or spurred cordon method on medium-textured soils tending to loose , with good presence of skeleton. Final yield of 80 quintals / ha.
The grapes are harvested in the third decade of September/I of October, by mechanized and manual harvesting, between night and the first light of dawn so that the low temperature prevents spontaneous start of fermentation.
Vinification takes place in steel at a controlled temperature (21°-23°C). Maceration of the skins on the must for 21 days with frequent pumping over. Alcoholic fermentation induced with selected vines, spontaneous malolactic fermentation. The wine ages for a period in steel and then wood.
Sud del Sud Salento Rosso PGI by Claudio Quarta Vignaiolo has an intense ruby color. Scents of red fruits and balanced plums with hints of spices and balsamic herbs. On the palate it is complex and harmonious
Pairings: Red meats and aged cheeses.
