Susumaniello Salento Rosso IGT is one of the latest novelties in the Candido winery. Susumaniello is a multifaceted vine originating from the Brindisi area, where the Candido winery in the small town of San Donaci has been producing its wines for more than 90 years.

The wine is obtained starting from susumaniello grapes processed in organic content, grown in the countryside of Brindisi with mixed Guyot and spurred cordon techniques. The mechanized harvest of the grapes is carried out around the third decade of September. Once they arrive in the cellar, the grapes are de-stemmed and crushed and then macerated for about ten days. Fermentation takes place at a controlled temperature and finally the wine matures in steel and in the bottle.

This Susumaniello produced by Candido is presented in the glass with a ruby ​​red color, with slight and young purple reflections on the sides. The nose reaches fine and consistent aromas of ripe fruit such as plum, cherry, blackberry, currant and strawberry. Immediately afterwards, notes of graphite, aromatic herbs and floral fragments arrive. In the mouth it is immediately seductive, warm and sharp. The composite tannic texture is already almost smooth. Wine that expresses balance, structure and softness. In the aftertaste there are still reminiscences of excellent local fruit with a long and pleasant finish that makes this wine more interesting than ever.

Pairings: Try it on the typical cuisine of the Apulian land, but also on well-structured seafood dishes based on tomatoes.
