The Teresa Manara Salice Salentino Riserva Cantele is a great wine produced using Negroamaro grapes cultivated using various methods, including trellis, cord-trained, and small Apulian tree system, in the territory of Guagnano (Province of Lecce).

The name of this wine is derived from the homage that her son, Augusto Cantele, wanted to pay to Mother Teresa Manara, a strong and proud woman who crossed Italy during the years when business ventures were still reserved for men. Her spirit now infuses the most important selections of Chardonnay and Negroamaro at the Guagnano estate. The grape harvest takes place at the end of September. After the pressing, the must remains in contact with the skins for maceration for 8 to 15 days. The fermentation temperature ranges between 22 and 26°C. Once malolactic fermentation is complete, the wine is aged in French oak barrels for about 12 months.

Characterized by an intense ruby red color with subtle amarena reflections. On the nose, you can detect red fruit and flowers with a rich and expansive aroma of violet, mastic, and black currant, complemented by the spiciness of the undergrowth and Mediterranean scrub. On the palate, the flavor echoes the bold and distinct expression typical of Negroamaro, while maintaining a noticeable finesse. Serve at a temperature of 18°C.

Pairing: Perfect to accompany platters of cured meats and cheeses, it pairs beautifully with tagliatelle with wild boar ragù and game dishes.
