Terra Guaniani Salice Salentino Rosso DOP is a wine that takes its name from the ancient name of the territory belonging to the Feudi di Guagnano and is produced from Negroamaro grapes harvested manually in early October with manual harvest of the grapes, grown with the system of espalier and spurred cordon in the countryside of Guagnano. Destalking, fermentation maceration in contact with the skins for 10 days followed by draining in a soft press with a temperature control of the must at 25°C. The wine follows the malolactic fermentation followed by an aging of 6 months in French oak barriques at the end of which it is bottled.
This DOP wine is a wine with an intense ruby red color with a strong note of spices and licorice on the nose and with a characteristic body and structure typical of the grape variety. A remarkably balanced and pleasant wine to drink.
Pairings: suitable for grilled red and white meats, important first courses and hard and semi-hard cheeses.
