The Torre Testa by Tenute Rubino is absolutely a wine to try. First because produced by a company that is collecting numerous successes in the international oenological field, and then above all because it fully exploits the potential of a native Salento vine. The Susumaniello is the third autochthonous vine of the Salento and more precisely, of the agro brindisino. In the viticultural tradition of this area it was planted together with Negroamaro and black Malvasia. It requires a type of sandy soil, an alcoholic and malolactic fermentation in steel tanks and a refinement in the bottle. In the mid-80s, in Brindisi, the Rubino family began to build the current Tenute Rubino farm, which has now become the production base for excellent wines including Susumaniello. The entrepreneurial project focuses on the production of quality wines in the Salento area, particularly suited to the cultivation of vines.
The Torre Testa by Tenute Rubino, Susumaniello in purity, is an exemplary wine: complexity and elegance find a perfect synthesis. A clear ruby red wine with violet reflections. The scent is characterized by a complex bouquet, with vinous and red fruit scents (plum, black cherry and blackberry) without missing spicy pepper and vanilla notes. The taste is dry, warm and soft, savory and quite fresh. Intense and persistent.
It is produced by harvesting in boxes in the first days of October, with a controlled drying for 2/3 weeks. Fermentation is carried out in steel tanks with a 16-day maceration at a controlled temperature. Then the malolactic fermentation takes place and then the 12-month refinement in barrique.
