Verdeca is an ancient white grape variety of uncertain origin, quite widespread in Puglia. Its maximum productive and qualitative expression is linked to the territory of the Itria Valley, where it is grown on a hilly area that boasts excellent sun exposure and is well ventilated. These conditions allow us to produce fresh and aromatic wines, delicately fruity and elegant, which have nothing to envy of other similar vines grown in more northern regions of the country.

The grapes are grown with the Guyot training system, in eluvial, calcareous-clayey soil with a planting density of 4500 plants per hectare and a final yield of 2.5 kg of grapes per plant. The harvest is carried out manually between the end of September and the beginning of October.

The grapes are harvested in the early hours of dawn in order to preserve the aromas and subsequent soft pressing. Fermentation of the must with selected yeasts at a controlled temperature of 13° for 10 days. Finally, the wine rests for 3 months in a steel tank and 1 month in the bottle.

Paolo Leo’s verdeca presents itself in the glass with a bright yellow color with greenish reflections. Delicate hints of apple, citrus and nuances of white fruits. Fresh and tasty, it leaves a long and elegant finish.

Pairing: Perfect wine to pair with fish-based aperitifs, salads and excellent with seafood first courses.
