Zin is a white wine produced by the Consorzio Vini di Manduria from grapes of the Fiano variety manually harvested from 20-year-old espalier-grown vineyards on medium-textured limestone tuffaceous soils located in the Manduria area. The vinification is carried out in white and partly with the grape harvest around mid-September. After harvesting, fermentation takes place at a controlled temperature. The wine is then aged in the bottle. After an organoleptic examination, the wine has a straw yellow color with greenish, crystalline reflections. The scent is intense and complex, with hints of sweet white fruit (apple and pear), expresses a delicate floral bouquet of orange flowers. On the palate the taste is dry, of good structure, fresh, justly sapid, it fully recalls the olfactory sensations.
