Cantina Supersanum was born in 2013, it has its roots on a deep environmental ethics and has a totally familiar and artisanal dimension. The company is located in Supersano, a town in the province of Lecce which is part of an area with slight hilly slopes, a watershed between Gallipoli and Otranto, almost symbolizing a crossroads between the seaside resorts of the Ionian Sea and those overlooking the Canale d’Otranto
Four generations of farmers and wine producers, a story of passion and respect for the Earth that has been going on for over a century: today Gabriele, Paolo and Sara Nutricato of Cantina Supersanum are the expression of this. A few years ago, the cousin Antonio De Vitis, a management engineer who takes care of the commercial and foreign part, has also joined the brothers, coordinating the production processes of the company.
Strongly linked to the tradition and memories of a different Supersano, dominated by vineyards rather than olive groves, the Nutricato brothers have based their wine production on agricultural techniques and winemaking methods that are a mix between the teachings handed down from father to son and the new technologies, obtaining a production of natural-artisanal grapes and wines without the use of chemical products, thus restoring the microbiological balance of the land and preserving the integrity of the territory and its fruits.
During the vinification phases the slow processing cycles are respected, a selection of the best grapes is made; decanting, decanting and bottling are carried out following the lunar and seasonal cycles, the refinement takes place on fine lees, without excessive filtration. In the cellar, unnecessary and expensive chemical additives are not used, with the exception of sulphites which are however extremely limited, in quantities that are very little above the threshold indicated on the label.
The company is also a member of another important association called VinNatur (“Natural Viticulturists Association”) whose purpose is to join the forces of those winemakers who have chosen to produce natural wine by acting in full respect of the territory, the vine and natural cycles, limiting the use of invasive and toxic agents of a chemical nature, first in the vineyard and then in the cellar, through experimentation and the application of a specification.
Cantina Supersanum is associated with the F.I.V.I. (Italian Federation of Independent Winegrowers) an association that brings together those artisan winemakers who personally follow the entire supply chain from the care of the vineyard, to the bottling and sale of wine, focusing their attention on the production of healthy grapes that do not need the cellar make-up.
Since 2016, the company has been following the organic production system for agricultural production and is certified by the Bios control body.
Since 2020 the winery has been included in the Slow Wine circuit, in fact it is mentioned and related review in the prestigious guide.
