The Garofano winery of Severino Garofano Vigneti e Cantine is located in Copertino (Lecce_Puglia/Italy).
A long history of Severino Garofano, a great winemaker who wrote the history of viticulture in Puglia. Severino has been able to enhance the vines of this region with his work, his technique and his writings. The winery was born after 40 years of experience as an enologist and consultant at the largest wineries in Puglia.
His life is inextricably linked to the history of Negroamaro in the first place and then of the indigenous grapes of Puglia. The Apulian grapes were in fact used, until the arrival of Severino, as blending wines for wines in northern Italy and in France. Severino instead succeeded in making to understand greatness and potentiality of the autochthonous vines bringing the winemakers to invest in their own cellars and to produce their own labels.
In 1995, Severino Garofano purchased a vineyard, a production plant and an ancient farm of the mid-800s in Copertino and founded the Monaci company. From here begins its extensive production of red, rosé and white wines.
The vineyards of the Garofano winery are located in the territory of Copertino, in the fiefdom of the “Li Monaci” Masseria. 30 hectares of vineyards of which 16 are vineyards of Negroamaro, Montepulciano, Malvasia Bianca and Chardonnay. Vineyards bred respecting the nature and tradition of the Salento area.
Today the company is run by Renata and Stefano, Severino’s sons who died in 2017.
