Cantina Paolo Leo is located in San Donaci (Brindisi_Puglia/Italy). The Leo family links its history to that of viticulture in Puglia in the early 1900s. It was during this period that the founder of the Leo family began producing their own wines. The grapes were those from the vines owned by the family and were vinified in their own mill.
In 1989 Paolo Leo, the fourth-generation winemaker, founded the new winery. A structure with an area of 15,000 square meters. Modern technologies are added to the family tradition linked to the territory and its history. So here is the modern wine-making and ageing system for wines. The old family mill was recovered and houses the barrel room for the ageing and ageing of the wines of the Paolo Leo winery. The 400 sqm barrel room contains 500 225 litre French oak barrels.
Since 1980, the company has chosen to focus on enhancing the indigenous varieties of Salento, such as Primitivo, Negroamaro, Malvasia White and Black of Lecce.
The grapes come from the 25 hectares of vineyards owned in the territory of San Donaci. The breeding is espalier for vines over 15 years old and Apulian sapling for those over 40 years old.
