“OLD VINES” Primitivo Salento IGP – Morella: Morella’s top-tier, pure Primitivo. Obtained from the selection of the best grapes from **bush vines over 75 years old (average age 85 years)**, it is distinguished by complexity, opulence, and a long combined aging in barrique and bottle. It is a powerful, warm, and enveloping wine.
History and Winemaking
The Morella winery aims to enhance its “old vines” vineyards, considered the oldest and most distinctive, to obtain raw material of absolute concentration. **Old Vines** is the flagship label, obtained from the selection of the best grapes from a vineyard **over 75 years old**, with a stated average age of approximately 85 years. The grapes are grown on “red soil” with a draining limestone substrate in the Manduria area, using the traditional Apulian bush vine (alberello) technique. The **yield is extremely low** (about 30 quintals per hectare). The harvest is manual and takes place in the first ten days of September. Fermentation occurs in small **wooden vats** with manual punch-downs at a controlled temperature. The wine matures for **14 months in Allier oak barriques** and continues aging for at least **18 months in the bottle**.
Organoleptic Profile
Appearance: **Dark and impenetrable ruby red** color.
Nose: Great dense fruit of **black cherry**, **plum in liqueur**, and **tobacco**, with hints of **caramel** and **vanilla**.
Palate: **Powerful**, **warm**, **opulent**, with a total embrace of sweet fruit balanced by acidity, alcohol content, and structure that fully support the slight sweetness.
Food Pairings
Ideal with: **Horse meat stew** (Pezzetti di cavallo al sugo), flavorful **grilled meats**, **roasts**, **cured meats**, and **medium-to-long aged cheeses**.
