History and Production
Curtirussi Negroamaro comes from vines approximately 30 years old, cultivated using the traditional **Apulian Bush Vine system** (yield of 80 quintals/ha). Harvesting takes place between the second and third decade of September. The winemaking process is designed for aging: the prolonged maceration ensures a rich extraction of polyphenols and tannins. After fermentation and separation from the lees, the wine ages in stainless steel for the first year and then completes its aging cycle in **oak barrels**, before being stabilized, filtered, and bottled.
