History and Winemaking
EVEXÍA Negroamaro is produced with grapes from organic farming. The harvest is mechanized, carried out in the early hours of dawn to preserve integrity. Winemaking involves a **short crushing and cold maceration**, followed by temperature-controlled fermentation (22-24°C) and spontaneous malolactic fermentation. Aging takes place exclusively **in stainless steel** to maintain the purity and freshness of the aromas.
