History and Winemaking

The Negroamaro grapes are harvested manually in late September, after a **slight drying on the vine**. Harvesting is selective, followed by isothermal truck transport. In the cellar, there is a further selection on a sorting table. Maceration on the skins lasts 3-4 weeks in steel vats. The wine matures for **12 months in barriques** and is bottled **without fining or filtering**, to preserve its aromatic and structural integrity.
