Susu IGP Salento is a limited edition wine produced by Cantine Risveglio. This extraordinary wine is obtained from 100% susumaniello grapes that come from one hectare of vineyard with five thousand vines with an age of about 70 years, which produce about eighty quintals of grapes from which sixty quintals of wine are obtained and finally only eight thousand bottles.
The susumaniello plants, all with piede franco, are cultivated with the traditional Apulian sapling technique growing on medium-textured soils with a large sandy component at an altitude of about 20 meters. above sea level located in the area between Giancola and Apani a few hundred meters from the sea and with a south-west exposure. The harvest is late and is done manually in the first week of October. The vinification takes place after the manual selection of the grapes and the classic destemming with a maceration and fermentation of 15/20 days at a controlled temperature in truncated-conical steel tanks. It is then rested and aged for 4 months in 50 Hl French oak (Allier) truncated conical vats. Finally, the wine rests for a few months in the bottle before being put on the market.
Susu weighs in the glass with a ruby red color with violet reflections. The nose is intense, complex and fine with marked hints of red berry fruit. Spicy and frank. In the mouth it is warm, soft and round. It expresses a good freshness and a typical tannicity of susumaniello which is completed with a light sapidity. Balanced and quite intense. Persistent and fine finish.
Pairings: Excellent with red meats. Ideal partner for medium and high seasoning cheeses.
