Description
AMATIVO Salento IGP – Cantele: AMATIVO is a red wine that celebrates the union of Salento’s two most beloved native grape varieties, **Primitivo (60%)** and **Negroamaro (40%)**, produced by the renowned Cantele winery. The grapes come from vineyards cultivated using the **alberello** (bush vine) system in the territories of Guagnano, Sava, and San Pietro Vernotico. The **12 months of aging in barrique** contributes to giving this blend remarkable complexity and **extreme softness**, culminating in a broad and remarkably lasting flavor profile. It is characterized by an **intense ruby red color**, aromas of **rose, violet, wild berries, dried fig, jams, and vanilla**, and a **copious, balanced taste** of great harmony.

General Description and Longevity
Amativo is the expression of an almost marital bond between the two symbolic grape varieties of Puglia. Primitivo offers body and ripe fruit, while Negroamaro provides elegance and structure. The prolonged aging in barrique lends softness and tertiary complexity (vanilla, sweet spices). It is a wine with great longevity that, while enjoyable in youth, can evolve positively in the bottle for **6-8 years**, with the progression of its spicy and jam notes.
Organoleptic Profile
Color: **Ruby red**.
Nose: **Slow and long-lasting progression** of **rose** and **violet**, giving way to **wild berries, dried fig, jams**, and **vanilla**.
Palate: **Copious and balanced**. The olfactory harmony is repeated with delicate fruity and spicy progressions. Extreme **softness** and a broad, remarkably **lasting** retro-olfactory impact.
Food Pairings
Ideal with: **Hearty first courses** (e.g., baked pasta, meat ragù), **traditional Salento dishes**, **roasted or grilled red meat main courses**, **stewed meat**, or **game**.
Serving Temperature: 18° C (64° F)
Additional Notes
*An “indelible” wine due to the harmony and balance of its components. An excellent expression of the Primitivo-Negroamaro blend.*
