The vinification is carried out entirely in stainless steel at low temperatures to fully preserve the varietal fragrance and crisp freshness, making it **unusual for a white from Southern Italy** due to its pronounced acidity and savoriness.

Vinification solely in steel emphasizes these characteristics, making it a wine that should be drunk young to fully appreciate its vibrant aromatic profile, ideally within **1-2 years** of the vintage.

Organoleptic Profile

Color: **Straw yellow with greenish reflections** of great brilliance.

Nose: **Fruity and delicately floral**. Notes of **apple and citrus peel**, with hints of **hawthorn, acacia**, or **pineapple, white peach, and orange blossom/jasmine**.

Palate: **Fresh, savory, and well-balanced**. **Soft entry**, with a **balanced freshness** and a delicate **savory and fruity aftertaste** with slight balsamic hints.

Food Pairings
