Salento Winemaking

This organic wine is produced from old vines (40-60 years old), cultivated with the traditional Apulian “alberello” system. The grapes are hand-harvested in late September and undergo a long maceration of 3 weeks for an optimal extraction of aromas and color.

Organoleptic Profile

Appearance: Bright and vivid crimson red

Nose: Strong and pungent, with light hints of red fruits like blackberry, sour cherry, and cherry, and a stronger spicy impact with notes of black pepper, cloves, and sweet paprika

Palate: Dry and pleasantly acidic, with an initial smoothness and a long, persistent, and slightly bitter finish

Food Pairings

Perfect with: Meat roasts, game, stews, boiled meats. Can also be tried with “pezzetti di cavallo” or “polpo alla pignata salentino”.

Serving Temperature: 16-18°C
