CORTE VALESIO Salento IGP white wine of Agricole Vallone based in Lecce (Puglia/Italy).

CORTE VALESIO comes from fine Sauvignon grapes, planted at the end of the 1980s, from the Tenuta Flaminio. The soils have a calcareous-clayey nature. The harvest of the grapes takes place at the right level of maturity to preserve the typical aromas of this variety. Followed by destemming and crushing, a soft pressing. Finally, fermentation at a controlled temperature in temperature-controlled steel tanks for 20 days. Aging takes place on fine lees for 3 months. CORTE VALESIO subsequently matures in steel for three to four months

CORTE VALESIO Salento IGP is a dry white, elegant, with a good structure, able to be combined with a wide range of dishes. It is one to be served fresh but not frozen, to capture all its aromatic elegance.
