History and Winemaking
The name “Diciotto Fanali” celebrates the Salento rosé tradition. Grapes come from old **Apulian bush vines**, ensuring very low yields and high concentration. The process is unique: fermentation takes place in **small acacia barrels**, and the wine ages in these barriques for a full **12 months**, an extraordinary period for a rosé, which gives it its remarkable structure and spicy notes.
Organoleptic Profile
Appearance: Bright salmon color with slight golden nuances.
Nose: Broad and complex, with hints of **freshly ripened cherries** joining **fresh herbal** notes and subtle hints of evolution from aging.
Palate: **Dry, fresh, and soft**. Initially round, it develops an almost **tannic structure and body** that sets it apart. Elegant, fruity finish with a pleasant **spicy accent**.
Food Pairings
Perfect with: Given its structure, it pairs excellently with substantial white meats, cured meats, and more elaborate fish dishes (en papillote, grilled, or stewed). Also great with fresh cheeses.
