EGOCENTRIC is the new rosé wine produced from Primitivo grapes that come from vines around 30 years old, grown in the Cutrofiano countryside in Salento.

EGOCENTRIC is a wine produced using the ancient and traditional winemaking technique of Salento rosés, the “Salasso” (Bleeding). A bleeding of Primitivo grapes for a special rosé. Egocentric by Vinicola Palamà is a fresh wine, whose color testifies to the long contact with the skins, from which the best has been extracted. Primitivo has always been suited to reds, but for some years now this grape variety has also given great satisfaction for rosé. This wine with a decidedly unique structure testifies to this.

The grapes are harvested manually in wooden crates in the first days of September and immediately taken to the cellar where they undergo destemming and crushing, followed by a few hours of cryomaceration. This is followed by soft pressing and fermentation at a controlled temperature.

EGOCENTRIC has a cherry red color, lively and bright, which fills the glass with color. Typical Primitivo nose with fruity and slightly spicy notes. On the palate, the fruit is fleshy, intense in the first part of the sip while it slightly decreases in intensity on the finish. Good structure, with an acidity and freshness that make every sip satisfying.

PAIRINGS: ideal to pair with traditional Salento cuisine, but also excellent with flavorful pasta dishes and grilled pork.
