The winemaking involves 16-18 hours of maceration and the exclusive use of only 25-30% of the free-run must (obtained by *alzata del cappello*—lifting the cap) for temperature-controlled fermentation. The result is a rosé with an **intense coral pink** color, soft, savory, and a delicate bouquet of **cherries and fresh fruit**.
